Food Pairing with Green Juice and Dandelion Greens with Hot Oil Dressing
Food pairing with juices is one of the joys of being a foodie that I love the most. Lately, my body has felt a little run down from working so hard and neglecting the basics of nurturing myself from the inside out.
This recipe has been one of my favorites over the years, not only for the flavor but also for the healing benefits of eating dandelion. Yes, I’m talking about the herb — or “weed” — you might normally toss from your flower bed or lawn. Dandelion greens are exceptionally high in protein, potassium, calcium, sodium, and vitamin A — all the nutrients my body needs to feel revitalized.
It’s important to use baby dandelion greens since they’re less bitter. And the hot, sweet vinaigrette dressing helps balance the bitterness beautifully. (Read More)
