Almond Butter

Almond butter, made from ground almonds, adds creaminess, healthy fats, and a smooth texture to this recipe. It is naturally rich in vitamin E, minerals, antioxidants, and monounsaturated fats. It also helps give the energy balls their soft, satisfying texture before they are dipped in chocolate.


Ingredients

    • 4 Tbsp Energize Cacao Shake Powder (add 1 Tbsp more if you need extra energy)
    • 3/4 cup smooth almond butter
    • 3 Tbsp maple syrup
    • 1/4 tsp chipotle powder
    • 1/4 tsp sea salt
    • 1 1/2 cups 70% dark chocolate

I use dark chocolate bars because they usually melt smoother than chocolate chips. Many chocolate chips contain stabilizers that help them hold their shape, so bars can create a smoother melted chocolate coating.


Instructions

    1. In a bowl, mix together the almond butter, Energize Cacao Powder, maple syrup, chipotle powder, and sea salt until smooth and combined. The mixture should form a soft dough-like consistency.

    2. Roll the mixture into 1½-inch balls and place them on a parchment-lined tray.

    3. Place the tray in the freezer for 1 hour to chill.

    4. When you are ready to dip, chop, or break the dark chocolate bar into small pieces. Melt the chocolate using a double boiler or by placing a heat-safe bowl over a pot of simmering water.

    7. Place the tray back in the freezer for about 10 minutes, or until the chocolate hardens.
