BBQ Jackfruit Sandwich with Creamy Carrot Slaw (Plant-Based Recipe)

This sandwich was one of the most requested items at SpaJuiceBar.  People asked for the recipe often, and for a long time, I chose not to share it. Why? Because I wanted people to come to the juice bar for the experience — the food, the great conversations we had, and the feeling of enjoying it fresh, right there. I loved my customers, and I loved keeping them coming back. 

This is a delicious recipe, simply a yum-yum sandwich.  Meat lovers were so surprised that the jackfruit texture was plant-based.  If you enjoy a traditional BBQ pulled pork sandwich, you'll enjoy our plant-based version.  

There are three components to preparing this sandwich:

  1. Creamy Carrot Slaw with Chipotle Lime Dressing

  2. BBQ Sauce

  3. Seasoned BBQ Jackfruit

Start Here First

Prepare the carrot slaw first, as it takes the longest (mainly because it requires shredding the carrots). The slaw can be made ahead of time and enjoyed on its own or as a side dish. Creamy Plant-Based Carrot Slaw with Chipotle Lime Dressing Recipe

The BBQ Sauce is a quick and easy recipe. You can make your own or buy your favorite barbecue sauce, whichever fits your palate.  At the juice bar, we make everything from scratch.  It's important to use Green Jackfruit in Brine; we used Trader Joe's, but they are no longer selling it.  You can find jackfruit online or at an Asian or Caribbean grocery store.  
Before we begin the Jackfruit Recipe, prepare the carrot slaw first, as it takes longer to make.  You will spend your time shredding the carrots. After preparing the Carrot Slaw, start making the barbecue sauce so it’s ready to be added to the jackfruit.  


After the slaw is ready, prepare the BBQ sauce so it’s ready to add to the jackfruit.

BBQ Sauce Recipe (Make Ahead)

You can use your favorite store-bought BBQ sauce, but at the juice bar, we made everything from scratch.

Ingredients

  • 2 cups ketchup

  • ¼ cup apple cider vinegar

  • 2 tbsp honey

  • 1 tbsp Worcestershire sauce

  • ¼ cup brown sugar

  • 1 tbsp lemon juice

  • ½ tsp salt

  • ½ tsp black pepper

  • ½ tsp garlic powder

Instructions
Add all ingredients to a pot and stir to combine. Bring to a gentle simmer and cook for 5–10 minutes. Set aside to cool slightly before using.


Jackfruit Preparation
  • 1 can of jackfruit
  • 2 tsp cumin
  • 2 tsp chili powder
  • 1 tsp of paprika
  • 2 tsp of garlic powder
  • 1/8 tsp of chipotle powder
  • 1 tsp salt
  • 1 small onion sliced thin
  • 3 tbsp of olive oil
  • 1/2  or 3/4 cup of BBQ sauce

Barbecue Sauce Recipe ( Make ahead)
2 cups ketchup
1/4 cup apple cider vinegar
2 tbsp honey
1 tbsp Worcestershire sauce
1/4 cup brown sugar
1 tbsp lemon juice
1/2 tsp salt
1/2 tsp pepper
1/2 tsp garlic
Add all the above ingredients to a pot; stir to combine, then bring to a simmer for 5-10 minutes. You should make this ahead of the jackfruit so it’s ready to go as an added ingredient.

BBQ Jackfruit Ingredients

Jackfruit Preparation

  • 1 can green jackfruit, drained

  • 2 tsp cumin

  • 2 tsp chili powder

  • 1 tsp paprika

  • 2 tsp garlic powder

  • ⅛ tsp chipotle powder

  • 1 tsp salt

  • 1 small onion, thinly sliced

  • 3 tbsp olive oil

  • ½–¾ cup BBQ sauce

How to Prepare the BBQ Jackfruit

  1. Drain the jackfruit and squeeze out as much excess liquid as possible.

  2. Using your fingers, pull the jackfruit apart to create a shredded texture.

  3. Add all seasonings except the onion, olive oil, and BBQ sauce. Massage the spices thoroughly into the jackfruit. Set aside.

  4. Heat olive oil in a pan and sauté the sliced onions until caramelized, about 5 minutes.

  5. Add the seasoned jackfruit and BBQ sauce. Stir to combine and cook for 5–7 minutes, stirring frequently to prevent sticking.

  6. Remove from heat.


Assemble the Sandwich

  • Slice and toast your bun

  • Add the BBQ jackfruit

  • Top with the creamy carrot slaw

Serve with kale chips, potato chips, or your favorite side.

Storage:
The BBQ jackfruit will keep in the refrigerator for up to 7 days.
