BBQ Jackfruit Sandwich with Creamy Carrot Slaw (Plant-Based Recipe)

There are three components to preparing this sandwich:

Start Here First
Prepare the carrot slaw first, as it takes the longest (mainly because it requires shredding the carrots). The slaw can be made ahead of time and enjoyed on its own or as a side dish. Creamy Plant-Based Carrot Slaw with Chipotle Lime Dressing Recipe
BBQ Sauce Recipe (Make Ahead)
You can use your favorite store-bought BBQ sauce, but at the juice bar, we made everything from scratch.
Ingredients

2 cups ketchup

¼ cup apple cider vinegar

2 tbsp honey
-
1 tbsp Worcestershire sauce

¼ cup brown sugar
-
1 tbsp lemon juice
-
½ tsp salt
-
½ tsp black pepper
-
½ tsp garlic powder
Instructions
Add all ingredients to a pot and stir to combine. Bring to a gentle simmer and cook for 5–10 minutes. Set aside to cool slightly before using.
- 1 can of jackfruit
- 2 tsp cumin
- 2 tsp chili powder
- 1 tsp of paprika
- 2 tsp of garlic powder
- 1/8 tsp of chipotle powder
- 1 tsp salt
- 1 small onion sliced thin
- 3 tbsp of olive oil
- 1/2 or 3/4 cup of BBQ sauce
BBQ Jackfruit Ingredients
Jackfruit Preparation

1 can green jackfruit, drained

2 tsp cumin
-
2 tsp chili powder
-
1 tsp paprika
-
2 tsp garlic powder
-
⅛ tsp chipotle powder
-
1 tsp salt
-
1 small onion, thinly sliced
-
3 tbsp olive oil
-
½–¾ cup BBQ sauce
How to Prepare the BBQ Jackfruit

Drain the jackfruit and squeeze out as much excess liquid as possible.

Using your fingers, pull the jackfruit apart to create a shredded texture.

Add all seasonings except the onion, olive oil, and BBQ sauce. Massage the spices thoroughly into the jackfruit. Set aside.

Heat olive oil in a pan and sauté the sliced onions until caramelized, about 5 minutes.

Add the seasoned jackfruit and BBQ sauce. Stir to combine and cook for 5–7 minutes, stirring frequently to prevent sticking.

Remove from heat.
Assemble the Sandwich

Slice and toast your bun

Add the BBQ jackfruit

Top with the creamy carrot slaw
Serve with kale chips, potato chips, or your favorite side.
Storage:
The BBQ jackfruit will keep in the refrigerator for up to 7 days.
