Creamy Plant-Based Carrot Slaw Recipe with Chipotle Lime Dressing

Our Creamy Plant-Based Carrot Slaw with Chipotle Lime Dressing is one of those recipes people ask for again and again.  This slaw was a favorite at SpaJuiceBar, smoky, creamy, and so delicious with a kick of spiciness.  People enjoyed it on its own, paired it with sandwiches, or enjoyed it topped on our BBQ Jackfruit Sandwich.  Once you make it, you'll love it.

There are steps to this slaw; the first is the Chipotle Lime Dressing. The base of this dressing is cashews, not cream.  The cashews give it the creaminess, but there is one important rule you must follow: do not overblend.  The moment the dressing turns too thick, it’s been over-blended and will revert to a nut-butter consistency, which is not what you want.  It's literally a quick zip in the blender to blend the ingredients.  This is crucial.  The recipe makes a lot of dressing; you will not need all of it.  Perhaps you can use it for another dish.

Chipotle Lime Dressing

Chipotle Lime Dressing

  • Extra Virgin Olive Oil – 1¼ cups

  • Water – ½ cup

  • Lime Juice – ½ cup

  • Garlic, minced – 1 tbsp

  • Chipotle Powder – 1 tbsp

  • Ground Cumin – 2 tsp

  • Cashew Butter – ¼ cup

  • Apple Cider Vinegar – 2 tbsp

  • Salt – 1 tbsp

  • Honey – ¼ cup 


Instructions

  1. Add all ingredients to a blender.

  2. Blend just until smooth.

  3. Stop immediately once combined — do not over-blend

You might be tempted to buy shredded carrots.  Pre-shredded carrots are often dry and lack flavor. Freshly shredded carrots retain their natural sweetness and moisture, which makes a noticeable flavor difference in this slaw.

Carrot Slaw Ingredients

Carrot Slaw

  • Carrots, freshly shredded – 6 oz

  • Avocado, diced (about 2 large) – 2.5 oz

  • Cherry Tomatoes, quartered – 4 oz

  • Red Onion, shaved – 1 oz

  • Cilantro, chopped – a few sprigs

  • Black Pepper – a pinch

  • Chipotle Lime Dressing – 4 oz

Instructions

  1. Add all ingredients to a bowl.

  2. Gently fold in the dressing, taking care not to mash the avocado.

  3. Refrigerate before serving.

  4. Enjoy on its own, as a side, or in a sandwich.
